Super super healthy (raw, vegan, gluten-free, dairy-free, sugar-free!!) SO SO easy and quick to make, AND delicious to all who try it. A great starter for a dinner party (looks so sweet served in shot glasses) or Saturday lunch. Best served cold.
- 4-6 large tomatoes
- 1 medium cucumber
- 1 bell pepper of any color
- 1 onion
- 2 cloves garlic
- juice of 1 lemon
- small bunch of fresh coriander
- Salt and pepper to taste
Place the tomatoes in a blender and blend until smooth. Add the rest of the vegetables to the blender and chop into the tomatoes. Stir in the salt, pepper and lemon juice.
Chill in the fridge for at least one hour then serve with coriander on the top. Serve with fresh crusty bread.
