I love pasta. Fact. It is my weakness and I am well aware of it! I could eat it every day, easily twice. 🙂
I’m aware that since my magic banana ice cream recipe (https://redumbrellachronicles.wordpress.com/2010/08/06/magic-banana-ice cream/), there has been a serious lack of food related posts and this recipe below makes me swoon…..summery and light and lemony, perfect for lunch in the garden and so easy to make. Enjoy!
CREAMY PASTA WITH LEMON AND THYME
freshly cooked pasta
1 big lemon
1-2 sprigs of fresh thyme
200 ml/ 0,85 cup fresh cream
salt and pepper
extra-virgin olive oil
– Grate the zest of the lemon, put it in a pan with a little olive oil and the thyme and cook on low heat for two minutes.
– Add the fresh cream and cook until it has reduced and has become creamy.
– Add about two teaspoons of lemon juice, begin with one and taste the cream before adding the next, lemons vary very much in taste and strength.
– Stir well, heat up the lemon sauce quickly and mix it with freshly cooked pasta.
Personally I would then sprinkle some Parmesan and rocket on top…….
